To celebrate International Women's Day I made some homemade dumplings today. In Japan they're called 'Gyoza', in China, the country of their origin 'Jiaozi'. They're best when you first cook them in water and then fry them in a pan.
Here's a good video that teaches you the 'folding technique'. But as a beginner you can fold them however you like to make it a bit easier and buy readymade dough skins.
I stuffed mine with minced pork, chinese cabbage, onions, garlic, soy sauce, sesame oil (in fact I only used rape seed oil and added a few sesame seeds) and coriander. The sauce consisted of soy sauce, vinegar, fresh coriander and garlic. Delicious!
